A canning kitchen is a room set up for sealing a harvest into jars with heat, so the food keeps on a shelf rather than in a cold store. The work asks more of a room than ordinary cooking does: sustained heat, a large volume of boiling water, somewhere for hours of steam to go, and long uninterrupted runs at the stove.
The food decides the process, not the cook. Acidity is measured on the pH scale, where lower numbers mean more acid, and the dividing line falls at pH 4.6. Fruits, pickles and jams sit at or below it and are safe after 5 to 85 minutes in boiling water at 100 degrees C (212 F). Everything above the line - all fresh vegetables, meat, poultry and seafood - must be heated under pressure, at 116 to 121 degrees C (240 to 250 F) and 10 to 15 psi, for 20 to 100 minutes. The reason is one organism: the spores behind botulism survive boiling, and only a sealed pressure canner gets hot enough to kill them. Longer boiling cannot stand in for hotter. Tomatoes and figs fall close to the line and need lemon juice or citric acid added first. Height above sea level lengthens boiling-water times and raises the pressure required.
The heat source is part of the design, not an afterthought. A loaded canner is heavy and must sit flat on its burner without overhanging it; a smooth glass cooktop can crack under the weight, and many cut their own heat partway through, which quietly under-processes the batch. A dedicated gas ring or heavy solid element answers that. Steam needs real extraction or it condenses inside the building. A dial gauge loses accuracy with age and is tested yearly, since a drifted one spoils a season's batches invisibly. Sealed jars want shelving somewhere cool and dark. It pairs with a root cellar and a fermentation store for the crops jars serve badly, and with a garden planned so gluts arrive in turn - the scarce resource is uninterrupted stove time.
