In practice
Air holds water as invisible vapour and lets go of it when cooled far enough. That temperature is the dew point, which is why a cold glass goes wet on a warm day. A condenser pit is a stone-lined hole dug so its walls lose heat to the open night sky and fall below the dew point; moisture in the air touching them turns liquid and runs down to a planting. Its water is neither rain nor groundwater but what was already in the air.
It needs three things on the same night, each able to fail alone. A clear sky, because cloud throws the heat back and nothing gets cold. Air that is calm or barely moving: a light breeze renews the humid air across the stone, a strong one wipes the cold surface back to air temperature. And humid air, so the dew point sits close to the night temperature. Hot dry places with brilliant skies cool beautifully and have nothing to give up. The lining matters too: heavy masonry or deep rubble holds so much heat that it is still warm at sunrise, missing the window entirely. Build a surface that sheds heat fast, not a monument.
No source measures what a pit of any size yields, so it is a supplement to a planting that can already live on the site's rainfall, never the supply for one that cannot. Being a deliberate low point it pools cold air like a bowl, which deepens the chill it works by and makes whatever grows in it the first thing to freeze on a still night. Leaf litter left in the bottom composts instead of condensing, spoiling the surface and building gas heavier than air, so entry is confined-space work: ventilate first, never go in alone. Clearing debris and keeping the stone and drip path clear is the whole of the upkeep. It pairs with a fog net, which takes water from moving air where this takes it from still air, so the two fail on different nights, and with a collar of stone or gravel mulch that carries the planting around it separately.
