A maple tree stores sugar in its wood over summer and moves it as a watery sap when winter starts to break. Maple tapping is drilling a shallow hole into the trunk of such a tree and fitting a short spout, called a spile, that lets the sap drip into a bucket or a length of tubing. The tree is not felled and nothing is planted; the sugar comes from a tree that is already standing. The sap tastes barely sweet. It is boiled down afterwards, in a separate pan over a fire, until enough water has gone to leave syrup.
Everything depends on the weather doing one thing. Sap runs only when days rise above freezing while nights still fall below it, and that alternation lasts four to six weeks between late winter and early spring. Where a winter never cycles that way, the sap does not run and no equipment substitutes for it. Tree size is the second limit. The usual guidance allows one tap on a trunk about 25 cm (10 in) across measured 1.4 m (4.5 ft) above the ground, a second on a trunk over 45 cm (18 in), and never more than three on any tree. A trunk takes decades to reach even the first of those, so this needs a mature stand rather than a planting.
The volume is the thing beginners misjudge. Sap is about two percent sugar, so forty parts of it boil down to one part of syrup, and the wood burned under that pan is the largest single cost in the practice. Sap also behaves like milk: left standing in a warm bucket it sours within a day, so it needs cold holding and a quick boil. The collection system is the other recurring cost: micro-organisms build up inside tubing and droplines and cost most operations a tenth or more of their yield a year, unless the lines are cleaned and the spouts replaced. There is also a quieter price: a taphole leaves a scar above and below it that lowers the timber value of the first sawlog, so a stand tapped for syrup is worth less as sawn wood.
