In practice
A root cellar is a room dug into the ground, or built against it, that keeps a bulk harvest edible for months without a compressor. Earth a little way down changes temperature slowly, and the room borrows that steadiness rather than buying cold. Dense storage crops suit it, going in by the sackful, not the handful.
The catch is that there is no single right condition. Beets, carrots, cabbage and potatoes want cold and moist, 0 to 4 degrees C (32 to 40 F) at around 95 percent humidity; garlic and onions want the same cold but dry, nearer 65 percent; winter squash and pumpkins want cool and dry, about 10 to 16 degrees C at 60 percent. One undivided room cannot hold all three, and trying is the commonest mistake here. Warmth costs: shelf life shortens by up to a quarter for every 5.5 degrees C (10 F) above the cold target. Most crops must be cured first, for a week or several in a separate warm dry place, and curing does not rescue damaged or carelessly selected roots.
Whether a cellar suits a site at all is decided by the outside air, since it makes no cold of its own and only tracks what the air gives it. Where nights stay mild it can sit above target for months and lose far more moisture than a powered store. It pairs with a canning kitchen and a fermentation store for the bands it cannot hold, a curing corner ahead of it, storage varieties chosen at seed-order time, and moist sand or peat around roots that would shrivel. Air moves through a low intake and a high exhaust with dampers, worked against the daily cycle to catch a cold night and shut out a freeze. Condensation and mould follow warm moist air meeting a cold surface, fruit stored beside vegetables makes potatoes sprout, and rodents find the rest. Upkeep is reading a thermometer and hygrometer rather than trusting the room, and culling weekly, since one rotting root is a source, not just a loss.
