A sunken bed is a growing bed dug into the ground rather than built up above it - the opposite of a raised bed. Sitting lower than the ground around it, it gathers rain and irrigation water and lets them soak in instead of running off, and its lip shelters young plants from wind. The trade is warmth: raised soil warms early and lets planting start sooner but dries faster in heat, while a sunken bed keeps roots cooler and loses less water, at the cost of a later start and cold air settling in the hollow on frosty nights.
What decides whether it works is whether water runs into it from somewhere. A hollow that catches only the rain falling on itself is a wind shelter that happens to be lower; harvesting begins when ground uphill feeds it, and the usual proportion is one to three times the planted area draining in. It wants gentle ground, under about 2 percent slope, or the hollow diverts water instead of holding it. The soil has to be deep, ideally 1.5 to 2 m (5 to 6.5 ft), because the soil itself is the store. The technique belongs to dry places, described for annual rainfall of roughly 150 to 750 mm (6 to 30 in). A mulch layer about 7.5 cm (3 in) deep saves more water again.
The rule to carry away is simple: raised where drainage is the problem, sunken where evaporation is. On heavy soil or in a wet climate the same hollow becomes a sump, and on salty ground it is simply the wrong answer, since water leaves by evaporation and the salt stays behind. Whatever the catchment carries concentrates there too, so it has to be ground you would eat from. A basin traps sediment and needs cleaning out every few seasons; a new rim is weakest before the first storms, so it is built up in compacted layers of 10 to 15 cm (4 to 6 in); and digging brings buried weed seed up, which in one on-farm trial left the sunken plot with the heaviest weed pressure of the beds compared, worst at the edges and awkward to hoe because of the drop.
