Garlic Chives
Allium tuberosum
A clump-forming perennial bulb grown as a culinary herb for its flat, garlic-scented leaves, harvested by cutting through the season for a milder alternative to garlic. Star-shaped white flowers cluster atop leafless stalks held above the foliage in late summer and draw pollinators heavily. Every part - leaves, flowers, bulbs and seed - is edible, and the flowers and buds are also used as a garnish or pickled. Grows in full sun to part shade on well-drained ground from dry to evenly moist, tolerating a wide pH range, and self-sows readily enough that spent flower heads are usually cut before seed sets.
