Durum Wheat
Triticum durum
Durum wheat is the annual grain milled into semolina for pasta, couscous and noodles, sown fresh from seed each spring or autumn rather than grown as a perennial crop. It thrives through a long, hot, dry summer, but humid weather while the heads are flowering can trigger a fungal blight that shrivels the grain and taints it for feed. The straw left over after harvest still earns its keep as mulch, thatch or biomass, and the grain doubles as livestock feed as long as it is rolled rather than ground fine enough to turn to paste in a pig's gut.
