Einkorn

Triticum monococcum

Einkorn is one of the oldest cereals ever domesticated, still grown in small pockets of Europe and the Balkans rather than as a mainstream crop. It keeps its husk through threshing, so the grain has to be dehulled before milling, and its weak gluten makes it better suited to flatbreads, crackers and porridge than a raised loaf. Protein runs well above modern bread wheat, and it holds its own against barley and durum under poor growing conditions even though it yields less than modern wheat when the season and inputs are good.
