Emmer

Triticum turgidum

Emmer, known in Europe as farro, is one of the oldest cultivated wheats, still an important crop in Ethiopia and grown on a smaller scale in India and Italy. Like einkorn it keeps its husk through threshing and needs dehulling before milling, but it tolerates a wider range of growing conditions, including hotter growing seasons than most ancient wheats can take. The grain is high in protein and makes good pasta, bread, pilafs and flatbreads, though its biggest weakness in the field is losing ground to weeds rather than to heat or drought.
