Khorasan Wheat

Triticum turgidum

Khorasan wheat, sold under the Kamut trademark, is a large-kernelled relative of durum wheat with two to three times the grain size and well above the protein of common wheat. It handles a droughty growing season better than most wheats, giving up its yield edge only when conditions are already ideal, and its tall, strong straw stands rather than falling over. People who react to ordinary wheat products often tolerate it better, though it still carries gluten and is not a coeliac grain.
