Red Clover
Trifolium pratense
Red Clover is a nitrogen-fixing forage and cover crop - 19.7% crude protein fresh, a strong bee draw, and food and medicinal uses from its leaf, flower and root - but where summers run hot it behaves as an overwintering annual, producing from a fall sowing through a spring burnout rather than persisting on its full zone rating. Watch for bloat in grazing ruminants and phytoestrogens that can disrupt reproduction in sheep and pigs.
