Salad Burnet

Salad Burnet is an evergreen perennial herb whose young leaves taste and smell of cucumber, eaten raw in salads or steeped into cooling summer drinks. It doubles as an excellent pasture plant - livestock and wildlife graze it in every season, and it stays green through the cold months after grasses have gone dormant. A long taproot shrugs off drought and poor soil, but the plant will not tolerate shade or wet feet, and letting it flower turns the salad leaf tough and coarse.
