Savoy Cabbage
Brassica oleracea var sabauda
Savoy cabbage forms a loose head of deeply crinkled leaves that are noticeably tougher than a plain cabbage's, which is actually the point - they hold their texture in cooking instead of collapsing, making it worth growing alongside a standard cabbage rather than in place of it. It is a fall crop through and through: warm, lengthening spring days push it to flower before the head ever forms, so it goes in for an early-fall start and finishes over the cool months. Its roots are shallow and wide-spreading, so the ground around it should be mulched rather than hoed - scraping the surface prunes the roots and cuts the yield.
