Welsh Onion

Allium fistulosum

Welsh onion (bunching onion) keeps producing fresh green onion tops right through winter, stopping only when a hard freeze hits - a row cover thrown over it turns that into a reliable harvest instead of a lucky one. All three parts are edible: the bulbs and leaves carry a mild-to-strong onion flavor, and even the flowers make a pleasant garnish. Unlike most onions it settles into a perennial clump that slowly widens on its own underground, so one planting can be divided for free stock instead of rebought. It suppresses nearby legumes, like other alliums, and is toxic to dogs, cats and other livestock in quantity.
